Almond Lemon Cake-Gató de Almendras Mallorquin
Description
A delicately moist, lemon cake
Ingredients

100 grams
Raw cane sugar
200 grams
Almond flour

Line a bread loaf tin with baking paper

Separate the eggs yolks from the whites and place each into a large bowl

Add 50grams (1/2 cup) of the sugar into the yolks and beat well until light and fluffy

Add in the zest of the lemon and the juice of the two lemons

Stir in the almond flour and the baking powder

Beat the whites until stiff and add the other 50 grams of sugar

Fold the egg whites into the almond flour and yolk mixture

Pour into your prepared baking tin

Bake for 30 minutes at 180C degrees or 350F
